Average first response and confirmation time across the three channels:
- WhatsApp — First response 2 min 14 sec; table confirmation 4 min 50 sec. Live between 12:00-24:00; messages between 00:00-10:00 answered first thing in the morning.

For surprise setups WhatsApp is the only correct channel. The reason is practical: written record = brief document. The team shares the plan in writing between kitchen, service and photographer. Phone calls lose detail. For surprise reservations, share via WhatsApp:
- Date + time (flexible windows accepted)
- Guest count + relationship context (e.g. "5th anniversary", "marriage proposal")
- Partner's preferences (favourite flower, allergies, music)
- Cake/surprise dessert request + candle/writing request
- Photo-video request (in-house or external)

Cancellation policy — variation by channel
Cancellation policy for standard dinner bookings is channel-independent:
- Standard table (1-5 guests) — Free cancellation up to 24 hours before. Later: a courtesy notice is appreciated, no fee.
- Set menu + drinks package — Free cancellation up to 48 hours before. After: 50% of the set menu total.
- Group table (6+ guests) — Free cancellation up to 72 hours before. After: 50% of the per-guest set menu total.
- Private use / surprise setups — Deposit non-refundable; however a date change within the same season is free.
